JO's Mock Meatballs or Burgers:

Beat together:
5 eggs
1 c (4 oz.) shredded cheddar cheese
1/2 c. cream-style cottage cheese
1/2 c. chopped onion
1/2 tsp. salt
1/2 tsp. ground sage
Add:
2 c. herb-seasoned stuffing mix, crushed
1c. finely chopped walnuts
Shape into patties or "meatballs". Place into sprayed baking pan.
Pour one 8 oz. can tomato sauce over the patties. Bake at 350 degrees 35-40 minutes.
I normally cut the recipe in half (makes 5-6 burgers) -- except that I use 2 eggs and I still use an 8 oz can tomato sauce. Also, instead of chopping the walnuts, I crush them in a bag using a rolling pin. I do the same with the stuffing mix. Make sure to chop the onion pretty well--that way it's easier to form the patties or balls--they don't fall apart because the onion pieces are too large.
